Mediterranean Vegetable Bake
If you need a vegetable boost look no further than this tasty vegetable bake
Adult friendly, child friendly and even baby friendly if you ditch the olives (they’re a bit too salty) and definitely a great way to reach your 5-a-day
…hopefully already in the fridge!
Handful of mushrooms
1x red pepper
3x fresh tomatoes
1x tin chopped tomatoes
1x red onion, sliced
2x gloves of garlic, finely chopped
Handful of chopped fresh parsley
Pitted black olives
Feta cheese or goats cheese or any cheese in fact!
Keep it simple
Add a little oil to a large saucepan, add onion and garlic and sauté until soft.
Chop the veg into bite sized pieces and add to the pan
Cook for 10-15 minutes stirring frequently
Once vegetables are cooked pour the contents of your saucepan into a casserole dish and add the chopped tomatoes.
Sprinkle bread crumbs and chopped fresh parsley on top, sprinkle on olives and cheese and bake or grill until the breadcrumbs have browned and the cheese has melted
Mash or blend for babies and note that olives are best avoided due to their high salt content
