Makes 4:

  • 6 scotch pancakes
  • Small tub of half fat crème fraiche
  • 4 raspberries
  • Dusting of icing sugar

method

  • Use a small pastry cutter to cut out circles from each scotch pancake.

  • Place a dollop of crème fraiche on two pancakes circles and stack one on top of the other. Place a third pancake circle on top to form a 3-tiered stack.

  • Place a raspberry on top of each stack and dust with icing sugar to create a bite sized party treat. Repeat until you have used all the pancakes.
