Makes 4:
- 6 scotch pancakes
- Small tub of half fat crème fraiche
- 4 raspberries
- Dusting of icing sugar

Use a small pastry cutter to cut out circles from each scotch pancake.

Place a dollop of crème fraiche on two pancakes circles and stack one on top of the other. Place a third pancake circle on top to form a 3-tiered stack.

Place a raspberry on top of each stack and dust with icing sugar to create a bite sized party treat. Repeat until you have used all the pancakes.
