Breakfast berry pancakes
When the kids get you up at ridiculous o’clock and you need a productive activity to keep them entertained, these breakfast pancakes are just the ticket!
ingredients
must have in the cupboard…
200g wholemeal self raising flour
1tsp baking powder
2 eggs
300ml milk
200g fresh/frozen berries
method
Keep it simple
Sift flour and baking powder into a bowl.
Beat milk and eggs together.
Make a well in the flour and whisk the milk and egg mixture in gradually.
Add the fresh or frozen berries (no need to defrost) and stir
Add 2tbsps of batter to a hot, greased pan.
Cook until golden brown on each side.
Top with more berries or banana.
Enjoy!

Date and Coconut Cookies
these delicious cookies are sweetened naturally with fruits.
With simple ingredients and no added sugar or confectionary they are the perfect recipe for baking with the kids
and make a nice little addition to a picnic or lunchbox.
ingredients

100g chopped dates
100g mixed dried fruits
100g oats
90g desiccated coconut
3 tbsp wholemeal plain flour
1 tsp baking powder
1 tsp vanilla extract
1 ripe banana
1 tbsp vegetable oil
60ml milk (add more if the mixture is too dry)
method
Yum…
Heat oven to 170 degrees C
Grease a large baking tray
Mix all the ingredients together and add more milk (and/or mashed banana) if the mixture is a little too dry and not binding well.
Roll mixture into small balls, place on the pre-greased baking tray and flatten slightly with your hand.
Cook for 15-20 minutes until golden brown and firm to touch.

Banana Pops
A simple sweet treat that can be knocked up in minute, these banana pops are great for parties,
picnics and an extra special lunchbox addition.

1x banana in half (or thirds if it’s a large banana)
natural yoghurt
desiccated coconut
ice lolly stick
method
Yum…
Cut a banana in half (or thirds if it’s a large banana)
cover each piece in natural yoghurt using a pastry brush
roll in desiccated coconut until fully coated.
Push an ice lolly stick into one end and serve.
The kids can even do this one for you – winner!
