2 x 400g tins chickpeas in water, drained and patted dry
1 red onion, diced
2 garlic cloves, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
Handful of parsley
2 tablespoons olive oil
1 tablespoon plain flour
Place all the ingredients in a food processor and pulse until combined.
If you prefer a smoother texture keep blitzing until smooth. For a coarse texture pulse until just combined.
Shape into patties
Heat a little oil in a pan or on a griddle and cook on a low-medium heat for 5-6 minutes
0n each side or until golden brown.
Serve with salad and toasted pitta bread.

Tomato puree
Add your choice of toppings.
I used grated cheese and diced green peppers
but it usually depends on what I've got floating around in the fridge!
Pop under the grill,
Keep an eye on them until cheese has melted to your preference
Cut into small triangles for a bite sized nutritious snack or load on the toppings and serve whole for a quick an' easy tea.
